I noticed two small signs on Graf Spee's two turrets, the front turret says SMS Sharnhorst and the rear turret says SMS Gneisenau... at least what i can see :)

Is this some sort of tribute to theese ships? I dont think theese signs have anything to do with the "newer" KMS Sharnhorst or KMS Gneisenau even though they had the same type of turrets ;)

Anyone who knows anything about this?

Graf Spee's turrets have the wappen of SMS Scharnhorst (forward turret) and SMS Gneisenau (aft turret) on them as they did in real life. SMS Scharnhorst and Gneisenau were commanded by Admiral Maximilian von Spee at the Battle of the Falkland Islands in 1914 which resulted in the sinking of SMS Scharnhorst and Gneisenau as well as the loss of von Spee himself who was aboard Scharnhorst when she sank.

So the ship Admiral graf spee are named after the real Admiral Von Spee hence the weapons on the turrets?

Yes, along with the Honour 'Coronel' give on the bridge.
